CACAO CHIA SEED PUDDING
This is a super easy, healthy dessert for anyone craving chocolate. It brings together the decadence of cacao with the health benefits of chia seeds for a quick energy boost that’s both satisfying and nutritious.
Raw cacao is rich in antioxidants, minerals, and contains iron, potassium, calcium, zinc, copper, and manganese. Cacao also contains flavonoids that are believed to have cancer-fighting properties. It is said to help boost your mood, enhance memory, balance the emotions, lower blood pressure, and reduce your risk of cardiovascular disease and stroke.
THE RECIPE
Ingredients:
1 cup coconut milk (I recommend the powdered kind over canned, or else substitute oat/almond milk)
¼ cup chia seeds
¼ cup raw cacao powder
2 tablespoons maple syrup
½ teaspoon vanilla extract
INSTRUCTIONS
1. Vigorously whisk the milk, chia seeds, cocoa powder, maple syrup and vanilla extract in a medium bowl or storage container, being careful to incorporate any cacao powder sticking to the sides and bottom.
2. Cover the chia pudding and refrigerate until thick and creamy, at least 4 hours, or preferably overnight.
3. Give it a good stir and divide into two servings. Enjoy with fresh coconut whip cream and berries, if desired. Enjoy!
